I CANNOT stop thinking about these ramen bowls! Tokyo is massive and can be overwhelming when it comes to choosing a spot to eat. This list has some of my favorites from each corner of the city. It’s impossible to capture everything in a single list, so stay turned for future editions!

📍 BEST SHOYU: RAMENYA SHIMA
💖 Why I love it: Deep, smoky shoyu alongside rich and refined chicken soup. Doesn’t get any better than this.
🚂 Station: Nishi-Shinjuku-Gochome
📍 BEST SHIO: MENYA SIGN
💖 Why I love it: A blend of olive, vegetable, and chicken oil floats atop a seafood soup. A spritz of grapefruit oil, and ginger pork wontons. Unreal aromatics.

📍 BEST NIBOSHI: Koike
💖 Why I love it: Creamy niboshi soup balanced with the smooth addition of chicken. White onions, firm noodles, thin pork.

💖 Why I love it: A yin-yang of chili oil floats atop the creamiest thick white miso. Perfectly sautéed bean sprouts.

💖 Why I love it: Creative limited edition ramens push all the boundaries. I’ll never forget this Valentine’s Day cocoa mole tsukemen.

📍 BEST TSUKEMEN: TAKEKAWA
💖 Why I love it: Historic old house serving rich chicken tsukemen. Locally sourced vegetables top chewy noodles.

📍 BEST TANTANMEN: BLOOD MOON
💖 Why I love it: Rich sesame based tantanmen with intensely spicy options. Mega chewy noodles.

📍 BEST TONKOTSU: RAMEN HIIKI
💖 Why I love it: Individualized version of classic iekei. Pork and chicken cooked separately and combined when ordered. Pronounced clean flavors, but still mouth-coatingly oily.

📍 HONORABLE MENTION: SHIBASAKITEI
💖 Why I love it: Clean niboshi shoyu with beautiful noodle fold. I just can’t stop thinking about this bowl.
